I don't have any OS X machines myself, so cannot help with the details,
but basicly JACK is the only supported (by ecasound) audio device API that
works on OS X.

Take a look at e.g.

Once you have JACK running, you can record with:
sh> ecasound -i jack,system -o foo.wav

This records from the JACK "system" audio device (usually the main
soundcard on your system).
